White tea is produced from immature tealeaves, which still have their youthful coating of fine white fur (hence the name). Tealeaves are picked before the buds are fully open and, like green tea, the leaves undergo very little processing and fermentation. The leaves are steamed instead of air-dried, thus retaining an even higher level of antioxidants than Japanese green tea, making it a wonder amongst the wonder teas! These additional antioxidants may assist with heart health, the fight against certain cancers and general immunity levels. The high level of fluoride in white tea may also assist in the fight against tooth decay.
